- 1Â 1/8 lb potatoes sliced thin,

- 1Â 1/8 lb cucumbers peeled, sliced thin
- 3 x hard-boiled egg whites thinly sliced
- Â Â (from the boiled Large eggs used for the sauce)
- 10 x lettuce leaves
- 1 x tomato
- 3 x hard-boiled Large eggs yolks only
- 1 med boiled potato
- 2/3 c. melted butter
- 1 tsp powdered lowfat milk
- 1 Tbsp. sugar
- 1 Tbsp. vinegar
- Â Â Salt to taste

- Mash the egg yolks and the potato together, add in the melted butter and blend until smooth. Mix the powdered lowfat milk, pepper, sugar, vinegar and salt. Blend until smooth.
- Mix the potato chips, cucumbers, and sliced egg whites with the sauce. Pile it on a big, flat dish lined with the lettuce leaves. Put the sliced tomatoes decoratively in the center.
- This recipe yields 3 to 4 servings.
