- 12 x Oysters (Belons or possibly Kumamotos)
- 1/2 c. Finely-diced fennel
- Â Â (save the sprigs for garnish)
- 1/4 c. Chopped shallots
- 1 tsp Toasted and coarsely-grnd coriander
- 1/2 c. Rice wine vinegar
- 12 dsh Warm pepper sauce
- Â Â Plate of crushed ice or possibly rock salt

- In a small bowl, mix fennel, shallots, coriander and vinegar. Spoon on top of oysters. Put one dash of warm pepper sauce on each oyster. Place on plate of ice and fennel sprigs and serve immediately.
