- 1/2 c. fine dry bread crumbs
- 1 Tbsp. butter melted
- 2 lb boneless skinless chicken breast
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp salt
- 1/4 tsp grnd ginger
- 1/8 tsp cayenne pepper
- 1/2 x a lemon

- Preheat the oven to 425. Combine the crumbs and the melted butter, set aside. Lb. the breasts to 1/2" thick. Combine the spices and rub them into the chicken. Drizzle with the juice from the lemon and then press them into the crumbs, patting the crumbs on well. Place on a sheet in a single layer and bake for 20 min or possibly till cooked through.
