- 1/4 c. Wheat germ
- 3/4 tsp Salt
- 1 c. Almonds, grnd
- 1 tsp Baking soda
- 2 lrg Large eggs, beaten
- 1 c. Plain lowfat yogurt
- 1 tsp Vanilla
- 1/3 c. Oil
- Â Â Zest of 1 large orange
- 1/2 c. Raisins Or possibly currants
- 1/2 c. Dry apricots, diced

- Mix dry ingredients and dry fruit together in a large bowl.
- Combine wet ingredients and stir into dry ingredients just till moistened.
- Batter should be lumpy.
- Fill oiled or possibly paper-lined muffin tins 2/3 full. Bake in preheated 350 F oven for 25 min.
- Makes 12 muffins.
