Ингредиенты
- 3/4 c. sweet cream butter, softened
- 1 c. sugar
- 4 x Large eggs
- 1 c. peach jam
- 1 tsp lemon extract
- 2Â 1/2 c. unsifted all-purpose flour
- 1 tsp soda
- 1 tsp cinnamon
- 1/2 tsp baking pwdr
- 1/2 tsp allspice
- 1 c. buttermilk
- 1 c. currants, dredged in flour
- Â Â Preheat oven to 350 degrees.
- Â Â Grease three 8" round cake pans.

- In large mixer bowl cream butter and sugar till light and fluffy.
- Add in Large eggs, one at a time, beating well after each addition.
- ` Blend in jam and lemon extract.
- Mix together flour, soda, cinnamon, baking pwdr and allspice. Add in dry ingredients alternately with buttermilk. Mix in currants.
- Turn into pans.
- Bake at 350 degrees for 25 to 30 min till toothpick inserted in center comes out clean.
- Cold 5 min; remove from pan. Cold completely.
- Spread Cream Cheese Butter Icing between layers and on top of cake. (See recipe.)
