- 5 lb Corned-Beef brisket
- 2 whl cloves
- 2 x Bay Leaves
- 8 med Potatoes, pared
- 1 med cabbage,cut in wedges
- Â Â Minced parsley
- 1 x Clove Garlic
- 10 whl black Peppers
- 8 med Carrots, Pared
- 8 med yellow onions, peeled
- 2 Tbsp. Butter

- Wipe corned beef with damp paper towels. Place in large kettle, cover with water. Add in garlic, cloves, black peppercorns, and bay leaves. Bring to boiling. Reduce heat; simmer 5 min. Skim surface. Cover kettle; simmer 3 to 4 hrs, or possibly untill corned beef is fork-tender. Add in carrots, potatoes, and onions during last 25 min. Add in cabbage wedges during last 15 min. Cook vegetables just until tender. Slice across the grain. Arrange slices on platter with cabbage. Brush potatoes with butter, sprinkle with minced parsley. Serve along with rest of vegetables and "Mustard Sauce".
