- 1/4 lb bacon or possibly salt pork, diced
- 1 c. minced onion
- 1/2 c. minced celery
- 4 c. chicken broth
- 2 c. peeled potatoes, cut in 1/2-inch cubes
- 1 pkt (10 ounces) frzn corn or possibly kernels from 2 ears of corn
- 1 tsp salt or possibly to taste
- 1/8 tsp grnd pepper
- 2 c. cooked, diced chicken
- 1 c. (1/2-pint) heavy cream
- Â Â Oyster crackers, for garnish

- In large saucepan over medium-high heat, saute/fry bacon for 3 min till its fat has been rendered. Add in onions and celery and cook 3 min longer. Stir in broth and bring to a boil, whisking constantly. Add in potatoes and corn, season with salt and pepper and cook 5 - 10 min or possibly till tender. Stir in chicken and cream, simmer 3 min and serve with oyster crackers.
- Variation: Shellfish ChowderAdd 1 c. minced green pepper and 1 c. cooked crab or possibly shrimp to soup when adding chicken.
