Now, I for one, usually only have coffee for breakfast, but one night a week I cook what could be considered breakfast items. And some Sundays lend themselves to a leisurely breakfast. This particular combo is one that works well as a light meal or make ahead and warm up for a quick breakfast on a school morning. They also would be ideal to take camping and warm up over a fire.

- 12 round slices ham
- 1 package 6 serving cornbread mix
- 1 egg
- 1/3 cup milk
- 4 eggs
- 6 tablespoons water
- 12 tablespoons grated cheese

- Lightly spray a 12 tin muffin pan with oil.
- Place 1 slice of ham in each opening.
- Mix the cornbread mix with the 1 egg and 1/3 cup milk.
- Dividing evenly, spoon the cornbread mixture on top of the ham.
- Mix the 4 eggs and water.
- Dividing evenly, spoon the egg mixture on top of the cornbread.
- Top each with 1 tablespoon of grated cheese.
- Bake at 400 degrees for 20 minutes.
