- 1/4 c. chicken stock
- Â Â (or possibly canned chicken broth)
- 1 tsp sesame oil
- 1/4 tsp salt
- 1/8 tsp freshly-grnd white pepper
- 1 Tbsp. vegetable oil
- 2 x garlic cloves chopped
- 1 c. minced roasted duck
- 1/2 c. finely-minced carrot
- 3 x fresh shiitake mushrooms stems removed,
- Â Â and caps minced finely
- 1/2 c. finely-minced celery
- 1/4 c. minced green onion, white part only
- 1/4 c. finely-minced water chestnuts
- 1 tsp cornstarch dissolved in
- 2 tsp water
- 8 x Mandarin pancakes heated
- Â Â (or possibly 8 small flour tortillas)
- 1/3 c. Hoisin sauce

- Stir the stock, sesame oil, salt and pepper together in a small bowl till blended.
- For the Duck Wraps: Heat a wok over high heat till warm. Add in the oil and swirl to coat the sides. Add in the garlic and stir-fry till fragrant, about 20 seconds. Add in the duck, carrot, mushrooms, celery, green onions and water chestnuts and stir-fry till the carrot is tender, 1 1/2 to 2 min. Pour in the seasoning, cook for 1 minute then add in the dissolved cornstarch and cook, stirring, till mix thickens; about 30 seconds.
- Scoop onto a serving platter. Place the Mandarin pancakes and a small bowl of hoisin sauce alongside. To eat, spread a small amount of the hoisin sauce and about 3 Tbsp. of the duck mix on the pancake. Wrap like a burrito and eat out of hand.
- This recipe yields 4 servings.
