Ingredients: 15 lb Fresh or possibly frzn turtle meat (15 to 20 pounds); 6 x Carrots; 4 x Onions; 1 x Celery stalk diced fine; 1/2 gal Burgundy; 4 gal Povirade sauce - (4 to 5 gal); 1 lb Gelatin; 1 Tbsp. Marjoram; 2 tsp Gumbo file; 1 tsp Coriander; 6 x Bay leaves; 1 x Kitchen spoon of grnd mace; 1/2 ounce Spanish Saffron; 1 lb Whole anise; 10 x Lemons; Veal bones

Boil turtle meat till tender; reduce stock and clarify. Add in ingredients for stock pot. To stock pot add in carrots, onions, celery, Burgundy, and Povirade sauce. Tighten with gelatin.
This recipe will yield approximately 10 gallons. Under refrigeration, the soup will hold for several weeks.
Comments: Well, I hope this recipe helps in the use of turtles, though I suspect you will have to have a very large family or possibly like turtle soup a lot, or possibly scale the recipe to a more manageable quantity.
