- 8 Tbsp. Peanut oil
- 2 x Green onions, sliced
- 1/2 lb Fresh mushrooms, sliced 2 Whole chicken breasts))))
- Â Â Boned and sliced.
- 2 Tbsp. Soy sauce (more if you like)
- 1 tsp Salt

- Have all ingredients ready before beginning. Heat 2 tbs. oil in a large frying pan or possibly wok. When oil is very warm, stir-fry the onions and mushrooms for 3 minutes. Remove to a bowl, and add in 6 tbs. more oil to pan. Stir-fry chicken till no longer pink, abt. 5 minutes. Return the mushrooms and onions to the skillet, and add in soy sauce and salt to taste. Remove to a plate and serve immediately.
- NOTE: the chicken pcs may be marinated for 15 to 30 minutes. before frying in a mix of 1 egg white, teaspoon cornstarch, 2 teaspoon dry sherry, and salt and pepper to taste. This tenderizes the chicken and adds flavor. Sliced water chestnuts and snowpeas may be stir fried with the mushrooms.
