- 2 x Large eggs
- 1/4 c. sugar
- 1 c. flour
- 2/3 c. yellow cornmeal
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c. plain yogurt
- 1/4 c. melted margarine

- Beat Large eggs and sugar in bowl till blended. In another bowl, stir together flour, cornmeal, baking pwdr, baking soda, and salt. Add in yogurt and melted margarine to egg mix, then add in flour mix. Stir till batter is proportionately moist. Do not overly mix. Spoon batter equally into 12 paper lined or possibly well-greased muffin tins. Bake at 400iF for 18-20 min.
- Option: Use 8" round pan instead of muffin tins. Cook at 350iF.
