- 2 Tbsp. Veggie broth
- 2 lrg Onions, thinly sliced, (2 c.)
- 1 lrg Green bell pepper, seeded and thinly sliced, (1 c.)
- 2 c. Veggie broth
- 1 can (6-ounce) tomato paste
- 1 can (1-lb) kidney beans, rinsed and liquid removed
- 1 can (1-lb) white beans (cannellini or possibly great northern), rinsed and liquid removed
- 1 can (1-lb) lima beans, rinsed and liquid removed (or possibly frzn limas)
- 1 med Red-skinned potatoes, scrubbed, unpeeled, cut into 1/2-inch cubes
- 2 Tbsp. Paprika
- 1 tsp Dry basil
- 1/2 tsp Caraway seeds
- 1/2 tsp Salt
- 1/4 tsp Freshly grnd pepper
- 1 c. Plain nonfat yogurt

- Heat 2 Tbsp. broth in large saucepan over medium heat. Add in onions and bell pepper. Cook, stirring frequently, 5 min. (Add in broth or possibly water as necessary to prevent sticking.) Add in remaining ingredients, except yogurt.
- Mix well. Bring mix to a boil, then reduce heat to medium-low, cover, and simmer 45 min or possibly till potatoes are tender. Stir several times while cooking. Serve over noodles (We like it over the wide egg noodles.)
- or possibly rice and top each serving with a dollop of the yogurt (about 2 Tbsp.
