- 16 sm Red potatoes, halved
- 1 x 1 lb. pkg. Green Giant Select LeSueur Frzn Baby Sweet Peas
- 2 Tbsp. Extra virgin olive oil
- 2 Tbsp. Butter
- 1 sm Leek, halved, thinly sliced
- 1 Tbsp. Minced fresh mint or possibly 1 teaspoon dry mint leaves
- 1/2 tsp Salt
- 1/4 tsp Pepper
Инструкции
- Place potatoes in large saucepan; add in just sufficient lightly salted water to cover. Bring to a boil. Reduce heat; cover and simmer 15 min. Add in peas to potatoes; cook 3 to 7 min or possibly till potatoes and peas are tender. Drain; toss with oil.
- Meanwhile, in small saucepan, heat butter over medium heat. Add in leek; cook and stir 5 to 7 min or possibly till tender. Add in mint, salt and pepper; mix well.
- Place potato mix in serving bowl. Pour leek mix over vegetables; stir gently to coat.
- Yield: 8 (3/4 c.) servings.
