- 200 gm Pears, peeled, cored and diced
- 1/2 x Orange, zest removed and diced
- 70 gm Raisins, minced
- 1/2 x Lemon, zest finely minced , juice of
- 30 ml Brandy
- 30 ml Grand Marnier
- 1 Tbsp. Sugar
- 50 ml Water
- 1/2 tsp Grnd cinnamon
- 1/2 tsp Grnd cloves Black pepper
- 1 pch Salt

- In a saucepan over a low to medium heat cook all the ingredients, stirring occasionally till the volume has reduced by a quarter (about 20 min).
- Allow to cold and set aside till ready to use.
