- 1 Tbsp. Vegetable or possibly extra virgin olive oil
- 1 x Onion, minced
- 2 x Garlic cloves finely minced
- 1 lrg Red bell pepper, diced
- 1 quart Homemade chicken broth
- 1/3 c. Fresh lime juice or possibly
- 1/4 c. Lemon juice
- 1 x Boneless chicken breast cooked and shredded
- 1 c. Cooked rice
- 1 c. Tomatoes, minced
- 1/2 c. Fresh cilantro, minced Salt and pepper, to taste Fresh cilantro, minced

- In large saucepan, heat oil and saute/fry onion, garlic and bell pepper till softened and fragrant - several min. Add in the chicken broth; bring to a boil. Add in the fresh lime or possibly lemon juice, chicken and rice and bring back to a boil. Add in tomatoes and cilantro, then turn off heat immediately.
- Taste and add in salt and pepper if you like.
- Serve immediately with cilantro sprinkled over top as a garnish to each bowl.
- Yield: 4 to 6 servings.
