- 2 c. Cornmeal
- 1/2 c. Flour
- 1/3 c. Sugar
- 1 tsp Baking Pwdr
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 x Large eggs
- 1 Tbsp. Butter, melted
- 2 c. Buttermilk
- 1 c. Cheddar cheese, grated
- 1 can Minced Green Chiles, liquid removed
- 1 can Mexicorn, liquid removed
- 1 Tbsp. Jalapeno (Optional), finely minced

- Preheat oven to 375 F. Place all dry ingredients into a large bowl and mix well. In another bowl, beat the Large eggs. Add in melted butter and buttermilk and mix well. Pour the remaining ingredients into the buttermilk and mix well.
- Make a well in the middle of the dry ingredients, and pour the buttermilk into it. Quickly stir in the buttermilk and mix well without beating. Fill muffin c.. Place into oven and bake till tops are just brown, about 20 to 30 min.
- Makes 14 to16 muffins.
