,%20because%20I%20made%20it%20for%20my%20%20Cheese%20and%20Onion%20Enchiladas.%20%20If%20you%20love%20the%20flavors%20of%20Mexico,%20get%20the%20book!%3C/p%3E%3Cp%3EOn%20Saturday%20mornings,%20I%20much%20prefer%20to%20make%20a%20breakfast%20with%20eggs.%20%20That's%20the%20day%20that%20Craig%20and%20I%20have%20to%20do%20our%20weekend%20chores,%20and%20I%20need%20protein%20to%20get%20me%20going.%20%20I'd%20never%20heard%20of%20Migas,%20before,%20but%20according%20to%20Lisa--%3C/p%3E%3Cp%3E%22If%20you%E2%80%99ve%20ever%20had%20breakfast%20in%20Austin,%20chances%20are%20you%E2%80%99ve%20had%20a%20plate%20of%3C/p%3E%3Cp%3Emigas.%20This%20dish%20of%20eggs%20scrambled%20with%20fried%20corn%20tortilla%20strips,%3C/p%3E%3Cp%3Esalsa%20and%20cheese%20is%20ubiquitous%20in%20some%20of%20the%20Texas%20capital%20city%E2%80%99s%20most%3C/p%3E%3Cp%3Epopular%20breakfast%20spots,%20including%20Las%20Manitas%20where%20it%E2%80%99s%20almost%20a%20crime%3C/p%3E%3Cp%3Enot%20to%20order%20their%20marvelous%20migas.%20I%20have%20fond%20memories%20of%20spending%3C/p%3E%3Cp%3Elazy%20mornings%20in%20this%20bustling%20Congress%20Avenue%20diner,%20scooping%20spoonfuls%3C/p%3E%3Cp%3EThe%20picture%20of%20this%20dish,%20in%20her%20cookbook%20is%20mouth-watering.%20%20I%20had%20to%20make%20this!%20I%20used%20a%20combination%20of%20cheddar%20and%20Monterey%20Jack%20cheese,%20and%20leftover%20corn%20tortillas%20(we%20do%20love%20our%20Taco%20Tuesdays).%3C/p%3E%3Cp%3EFor%20the%20eggs:%20%20Beat%206-8%20eggs%20(I%20used%20six),%20about%201/4%20cup%20milk,%20salt,%20pepper%20and%201/2%20tsp%20ground%20cumin,%20and%20about%201/4%20%20cup%20of%20fresh%20cilantro.%3C/p%3E%3Cp%3EIn%20my%20beloved%20cast-iron%20skillet,%20I%20heated%20about%20a%20half-inch%20of%20vegetable%20oil%20and%20fried%20the%20cut%20tortilla%20strips;%20cook%20them%20for%20about%202%20minutes,%20remove%20and%20place%20on%20paper%20towels.%20Set%20aside.%20Pour%20out%20most%20of%20the%20oil.%3C/p%3E%3Cp%3ESaute%20the%20onion%20and%20jalapeno%20(NOTE:%20Lisa%20uses%20four%20jalapenos,%20but%20I%20used%20only%20half%20of%20ONE%20jalapeno),%20until%20tender--%20about%205%20minutes,%20then%20add%20the%20garlic%20and%20cook%20just%20until%20fragrant--about%2030%20seconds.%3C/p%3E%3Cp%3EDISCLOSURE:%20%20I%20made%20this%20recipe%20TWICE,%20on%20separate%20weekends.%20%20With%20all%20due%20respect%20to%20the%20author,%20my%20first%20attempt%20didn't%20quite%20work,%20to%20my%20expectations--%20per%20the%20cookbook.%20%20I'll%20explain%20why%20at%20the%20end,%20and%20will%20show%20you%20how%20I%20had%20better%20success%20on%20attempt%20%232.%20%20MY%20WAY,%20TAKE%20TWO:%20add%20the%20eggs....%3C/p%3E%3Cp%3ECook%20the%20eggs,%20on%20medium-low%20until%20partially%20cooked...%3C/p%3E%3Cp%3E...add%20the%20cooked%20tortilla%20strips.%3C/p%3E%3Cp%3EAdd%20about%20half%20the%20cheese;%20give%20this%20a%20gentle%20stir%20to%20combine.%3C/p%3E%3Cp%3EThis%20step%20is%20completely%20optional:%20I%20wanted%20to%20use%20leftover%20salsa%20verde,%20and%20it%20was%20refrigerated.%20I%20don't%20like%20adding%20cold%20salsa%20to%20hot%20food,%20so%20I%20added%20some%20salsa%20over%20the%20mixture.%20%20Preheat%20the%20broiler,%20with%20the%20rack%20on%20high%20and%20broil%20for%20about%20one%20minute--%20until%20the%20cheese%20is%20bubbly%20and%20melted.%3C/p%3E%3Cp%3EBreakfast%20is%20ready!%3C/p%3E%3Cp%3ETASTING%20NOTES,%20TAKE%20ONE:%20The%20first%20time%20I%20made%20this%20recipe,%20I%20thought%20the%20flavors%20were%20good.%20Personally,%20I%20thought%20the%20textures%20weren't%20quite%20right.%20%20In%20the%20cookbook%20recipe,%20the%20instructions%20say%20to%20cook%20the%20eggs%20for%20about%20a%20minute,%20then%20add%20the%20cheese%20and%20to%20gently%20stir.%20%20Problem:%20%20Cheese%20plus%20gooey%20eggs%20=%20gooey,%20gloppy%20eggs.%20%20No%20bueno!%20%20Plus,%20when%20the%20tortilla%20strips%20got%20added%20to%20the%20gooey,%20gloppy%20cheese/egg%20mixgure,%20they%20got%20soggy.%3C/p%3E%3Cp%3EI'm%20not%20one%20to%20give%20up%20on%20a%20recipe%20that%20has%20promise.%20%20So,%20my%20adaptions%20were%20to%20cook%20the%20eggs%20more,%20%20then%20add%20the%20tortilla%20strips,%20to%20let%20them%20retain%20more%20of%20a%20crispy%20texture.%20%20Then%20I%20added%20half%20the%20cheese,%20to%20melt%20into%20the%20egg-tortilla%20mixture.%20%20By%20broiling%20the%20remaining%20cheese,%20I%20got%20the%20creamy-melted%20texture%20I%20wanted.%20%20Bingo!!%3C/p%3E%3Cp%3EIn%20a%20way,%20Migas%20reminds%20me%20of%20Nachos,%20but%20the%20eggs%20makes%20this%20a%20perfect,%20hearty%20breakfast.%20%20I%20can%20see%20lots%20of%20possibilities%20with%20this%20recipe%20that%20can%20be%20personalized%20to%20your%20own%20taste.%20Lisa%20says%20that%20you%20can%20add%20crumbled%20Mexican%20chorizo,%20chopped%20poblanos%20or%20anything%20else.%20If%20I%20had%20any%20refried%20beans,%20I'd%20definitely%20want%20to%20try%20adding%20those.%20%20I%20garnished%20this%20with%20sour%20cream,%20green%20onion%20and%20cilantro.%20If%20I%20had%20a%20ripe%20avocado,%20yep,%20that%20would%20be%20added%20to%20it.%20%20%20%20I%20only%20wish%20I%20had%20flour%20tortillas--%20and%20I%20plan%20to%20make%20Lisa's%20recipe,%20from%20her%20cookbook.%20%20Migas%20for%20breakast.%20%20It's%20a%20good%20thing.%3C/p%3E%3Cp%3ENow,%20I%20want%20to%20go%20to%20Austin,%20Texas!%3C/p%3E){kind=link}
