I live in California, but visited Texas last summer. My son took us to a Texas Roadhouse restaurant. My steak was good, but it was those hot rolls, slathered with the cinnamon butter that stood out the most. I searched around for a recipe, and settled on one that came from "Deliciously Yum". These are super easy to make (especially if you own a stand mixer), are really tender, slightly sweet and taste just as I remember them. Don't skip making the butter, because it is excellent! Ингредиенты

Cost per serving $0.27 view details
  • 2 1/4 teaspoons (1 envelope) active dry yeast
  • 1/4 cup lukewarm water
  • 1 cup lukewarm milk
  • 3 tablespoons melted butter, slightly cooled
  • 1/4 c. sugar
  • 4 cups all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • melted butter for basting rolls
  • For the butter:
  • 1 stick butter, softened
  • 2 Tbsp. honey
  • 2 Tbsp cinnamon (I reduced that to 1 Tbsp and was happy with it)
  • 2 Tbsp. powdered sugar

Инструкции

  1. Combine yeast and lukewarm water in the bowl of your stand mixer and let stand for 10 minutes (until yeast starts to foam and bubble).
  2. Add the milk, melted butter and sugar to the yeast mixture and give it a good stir (using the paddle attachment).
  3. Add 1 cup to 1 1/2 cups of flour to make a medium batter. (You're looking for a pancake-like consistency.)
  4. Next, add the egg and salt and incorporate well.
  5. Switch to the dough hook and with the mixer running on medium speed, add remaining flour. Continue mixing for 5 minutes or until dough is smooth.
  6. Sprinkle some flour onto the counter and place dough on top. NOTE: I have a silicone baking mat, and didn't find adding flour to be necessary. Let rest for 10 minutes.
  7. Meanwhile, grease another bowl with oil. Lift up the dough, and stretch it into a large ball, then place the dough inside.
  8. Cover with a clean kitchen towel and place in a warm place until dough has doubled in size, about 1 hour.
  9. NOTES: If you don't own a stand mixer, I have a Danish Dough Hook that works great. Mix the dough to the pancake batter stage, then start kneading in the rest of the dough. Frankly, because I love to bake bread, I cannot imagine not owning a stand mixer!
  10. My oven was in use, so I covered the bowl with a shower cap (great trick) and set it on top of my stove. In one hour, my dough had doubled! Or, turn your oven on to WARM for 1 minute and turn it off. This will accelerate the proofing of the dough as well.
  11. Remove the dough, from the bowl, and punch dough down.
  12. Place dough on floured surface and roll out into a square about 1/2 inch thick. (You could do this by hand, but I got a more even rectangular shape.)
  13. Using a pizza cutter**, cut dough into desired shapes. Place dough squares onto a parchment-lined baking sheet (or two, depending on how many rolls you end up with).
  14. NOTE: I recently purchases a pizza blade, through Amazon. I absolutely love this took, because it's perfect for cutting bar cookies or rolls.
  15. Cover with a towel and let rise again until doubled in size, about 45-60 minutes. (Mine was doubled in 30 minutes)
  16. Preheat oven to 350 degrees and bake for 10-15 minutes or until tops are golden brown.
  17. Remove from oven and immediately baste with melted butter. Serve dinner rolls warm with the cinnamon-honey butter. You will love it!
