- 1 c. liquid removed canned crushed tomatoes (reserve liquid)
- 1 teaspoon minced fresh parsley
- 2 teaspoon minced liquid removed capers
- 1 teaspoon dry oregano
- 1/2 teaspoon dry basil
- 1/8 teaspoon salt
- 3 c. sliced yellow squash, cut in 1/4-inch pcs
- 2 teaspoon grated Parmesan cheese

- In 1-qt casserole, combine tomatoes with 1/4 c. liquid, then parsley, capers, oregano, basil and salt. Add in squash and stir to combine. With vented cover, microwave on HIGH 5 min, stirring once. Let stand covered for 2 min before serving. Sprinkle with cheese before serving.
