- 4 ounce Pepper Jack Cheese
- 1/2 sm Avocado
- 1 tsp Lemon Juice
- 1/8 tsp Salt
- 12 x Leaves Fresh Cilantro

- Preheat oven to 425. Press a won ton wrapper into each of 12 miniature muffin tins. Cut the cheese into 12 cubes and place 1 cube in each pastry c.. Bake for 6 to 9 min, till the cheese melts and the pastry is golden and crisp. Meanwhile, peel the avocado and mash the flesh with a fork. Stif in the lemon juice and salt. When the won tons are done, remove to serving tray and top each with a dollop of guacamole and a cilantro leaf.
