- 1 1/2 c. self rising corn meal
- 1 c. buttermilk
- 2/3 c. oil
- 2 Large eggs, beaten
- 1 sm. can cream style corn
- 1 sm. can jalapeno peppers, liquid removed & minced
- 1/2 sm. green or possibly red pepper, minced
- 1 1/2 c. grated cheddar cheese

- Fold in order listed. Save some cheese to sprinkle on top of mix. Bake at 375 degrees for 30 min in cast iron frying pan in oven. Put oil in pan (1 to 2 Tbsp.) and heat in oven. Put ingredients in when pan is Warm.
