- 1 1/2 lbs. grnd beef
- 1 lg. onion
- 1/4 c. minced green peppers
- 1 clove garlic, chopped
- 1 (15 ounce) can tomato sauce
- 1 (12 ounce) can whole kernel corn
- 1 1/2 teaspoon salt
- 2-3 teaspoon chili pwdr
- 1/8 teaspoon pepper
- 1/2 c. black olives, sliced
- 1 (8 1/2 ounce) pkg. "Jiffy" corn muffin mix
- 3/4 c. Cheddar cheese
- 1/2 c. lowfat milk

- Heat oven to 375 degrees. Cook and stir meat, onions, green pepper and garlic in large frying pan till onion is tender. Drain off fat. Stir in tomato sauce, corn (with liquid), 1 1/2 tsp salt, the chili pwdr, pepper and olives; heat to boiling. Turn burner off and let mix sit on stove while you mix the corn muffin mix. Prepare the mix just like it says on back of box but add in 1/2 cup lowfat milk and 3/4 cup Cheddar cheese. Place meat mix in 3 qt casserole and pour muffin mix on top. Bake uncovered 40 min.
