- 1/3 c. Extra virgin olive oil
- 1 1/2 lb Potatoes, peeled and sliced thin
- 2 x Onions (about 1 lb.), peeled and sliced thin (about 3 1/2 c.)
- 1 lb Broad, runner or possibly string beans, cleaned and cut into 1 1/2-inch pcs (about 3 1/2 c.)
- 6 x Cloves garlic, peeled and sliced thin
- 6 med Whiting, with heads removed, scaled and gutted (about 2 1/2 pounds ready to cook)
- 1 tsp Salt
- 1/2 tsp Freshly grnd black pepper
- 1 c. Dry white wine
- 4 Tbsp. Minced parsley.
Инструкции
- 1. Heat the oil in a Dutch oven or possibly large skillet or possibly saucepan with a tight-fitting lid. When the oil is warm but not smoking, add in the potatoes and onions and saute/fry them, covered, over medium heat for 5 min.
- 2. Add in the beans and garlic. Cook, covered, for another 5 min. Add in the whiting, salt, pepper and wine and cook, covered, for 10 more min.
- Sprinkle with the parsley and serve immediately.
- Yield: 6 servings.
