- Heat the oil in a Dutch oven or possibly large skillet or possibly saucepan with a tight-fitting lid. When the oil is warm but not smoking, add in the potatoes and onions and saute/fry them, covered, over medium heat for 5 min.
- Add in the beans and garlic. Cook, covered, for another 5 min. Add in the whiting, salt, pepper and wine and cook, covered, for 10 more min.
- Sprinkle with the parsley and serve immediately.
- Yield: 6 servings.
