- martha dickens crust
- 1 1/4 c. graham cracker crumbs
- 1/4 c. sugar
- 1/4 c. margarine melted filling
- 8 ounce cream cheese softened
- 1/3 c. lemon juice
- 1 tsp vanilla
- 1 c. red tart pitted cherries liquid removed
- 2 Tbsp. sugar
- 2 tsp cornstarch
- 1/2 c. cherry juice

- CRUST: Mix graham cracker crumbs, sugar and melted margarine. Press into pie pan and bake at 375 F for 8 min. FILLING: Beat softened cream cheese till fluffy. Add in 1 can sweetened condensed lowfat milk and mix well. Then add in lemon juice and vanilla. Mix well and pour into cooled pie shell. Refrigeratefor 2 hrs, cover with canned cherry pie filling or possibly make a cherry glaze. GLAZE: Blend sugar and cornstarch, stir in cherry juice. Cook till thick and clear, stirring constantly. Stir in a few drops red food coloring, if you like, add in cherries. Cold. Garnish top of pie.
