- 24 marshmallows
- 1/2 c. crushed pineapple, liquid removed
- 3/4 tbsp. lemon rind, grated
- 1 (10 ounce.) box vanilla wafers
- 1/2 c. whipping cream, whipped
- 1/4 c. lowfat milk
- 1/4 c. pineapple juice
- 1 1/2 tbsp. lemon juice

- Heat marshmallows and 1/4 c. lowfat milk over warm water. After melted, add in 1/2 c. crushed pineapple, liquid removed, 1/4 c. pineapple juice, lemon riand nd lemon juice. Set aside till cool. Add in whipped cream. While it is cooling make vanilla wafer mix.
