- 1 Tbsp. Chopped garlic
- 3 Tbsp. Extra virgin olive oil
- 2 sm Onion
- 1 stalk celery
- 1 med Zucchini
- 1 x Carrot, peeled
- 1 c. Mushroom
- 3 x Diced tomato
- 3 Tbsp. Tomato paste
- 7 c. Chicken stock, or possibly vegetable
- 1 tsp Freshly grnd black pepper
- 1 c. Macaroni, cooked
- 1 c. Chickpeas, liquid removed
- 1 c. Italian green beans, snipped
- 1/2 c. Shredded cabbage
- 2 Tbsp. Minced basil, fresh Parmesan cheese Croutons
Инструкции
- In a 5 qt pot, saut a the garlic in the extra virgin olive oil for 10 min.
- Add in the onions, celery, zucchini, carrot, and mushrooms simmer covered for 30 min.
- Add in the macaroni, chickpeas, Italian green beans, cabbage, and basil simmer covered for another 30 min.
- To serve sprinkle bowl with Parmesan cheese and ladle soup over. Top with toasted croutons.
