- 1 tsp grnd coriander
- 1 tsp cayenne pepper
- 1/2 tsp cumin
- 1 pch turmeric or possibly 2 tbsp masala curry pwdr or possibly 2 tbsp madras curry pwdr
- 1/2 tsp salt
- 1 x lemon, juice, and, zest or possibly 1 lime, juice, and, zest
- 2 Tbsp. oil
- 2 lrg pcs of any fish, preferably a hard, fish, like snapper
- 1 handf cilantro, minced
- 1 x 6 ounce tin coconut lowfat milk

- Mix the spices and salt together thoroughly.
- Stir in the lime juice and sufficient coconut lowfat milk to make a paste. Spread the paste over both sides of the fish. Heat the oil in a frypan over high heat.
- Place the fish in the frypan and cook for 2 min on each side. Then add in the rest of the coconut lowfat milk, bring to the boil, reduce the heat to medium-low and let the fish simmer for 3- 4minutes.
- Serve with minced cilantro sprinkle over top, on rice
