- 3 Tbsp. Fresh lime juice
- 1 x Green onion, minced
- 2 Tbsp. Minced fresh cilantro
- 1 tsp Chopped jalapeno chile
- 1 tsp Extra virgin olive oil
- 1/2 tsp Chopped garlic
- 1/8 tsp Salt
- 20 lrg Shrimp, (about 1 lb.) peeled and deveined
- 1 Tbsp. Chopped red pepper
- 20 x Cucumber slices

- Stir together lime juice, green onion, cilantro, jalapeno, oil, garlic and salt in medium bowl. Toss shrimp with 2 Tbsp. of the dressing in another medium bowl. Cover and chill 30 min. Heat broiler. Broil shrimp about 3 inches from the heat source for 1 1/2 min per side till opaque. Immediately toss warm shrimp with remaining dressing and red pepper.
- Cold to room temperature. Arrange shrimp on cucumber slices.
