- 1/3 c. butter
- 1 1/2 c. sugar
- 3 x Large eggs
- 2 Tbsp. flour
- 2 Tbsp. cornmeal
- 1 1/4 c. liquid removed canned crushed pineapple
- 1 1/4 c. coconut
- 1 tsp vanilla
- 1 x unbaked 9" pie shell

- Heat oven to 350 degrees. In medium bowl, beat together butter, sugar, Large eggs, flour, and cornmeal till well blended. Add in pineapple, coconut, and vanilla. Mix well.
- Pour mix into pie shell. Bake 45 min or possibly till wooden pick insterted in center comes out almost clean.
- This recipe yields 8 servings.
- Comments: Luby's is one of the better known cafeteria-style restaurants. One of the best parts about going to the cafeteria is the wonderful dessert choices which you have.
