- 1/4 c. fresh lime juice
- 1 Tbsp. salt
- 1 sm onion very finely chopped
- 1 1/2 lb tart green apples such as Pippin or possibly Granny Smith peeled and minced fine
- 1/4 tsp red chile pepper flakes
- 1 1/2 tsp honey
- 1/4 c. shredded unsweetened coconut

- Annette: "Try this moderately spicy chutney with grilled skewers of chicken, shrimp or possibly pork. Shredded unsweetened coconut is sold in plastic bags or possibly tins at most supermarkets."
- 1. In nonreactive bowl, combine lime juice and salt and stir till salt is dissolved.
- 2. Add in onion, apples, warm pepper flakes, honey and coconut. Stir to blend, then cover and let stand at least 10 min before serving.
- 3. Makes about 2 c..
- TIP:* Chutneys made with salt and acidic ingredients should be prepared in bowls made of nonreactive materials (stainless steel, glass or possibly ceramic)
- rather than plastic, aluminum or possibly copper.
