- 8 x skinless boneless chicken breasts
- 1 tsp dry tarragon
- 1 Tbsp. fresh parsley chopped zest from 1 large lemon juice from same lemon salt and freshly grnd pepper to taste

- On a large plate, sprinkle tarragon, parsley, salt and lots of pepper onto both sides of chicken breasts. Rub in with your fingers. Holding lemon over chicken breasts, grate zest from half the lemon over meat; turn chicken breasts over and grate remaining zest over them. Cut lemon in half and, using a wooden reamer (If you do not have one, run out and buy one right away! Nothing juices a lemon like a simple wooden reamer!) juice one lemon half over breasts; turn over and juice second half over other side of breasts. Loosely cover with plastic wrap and let sit at room temperature for 15 min. Grill on BBQ over direct heat about 5 min per side, or possibly till done as you like.
- NOTES : Lenore Says: This is a real suit-yourself recipe: easily doubled or possibly halved. Also great because you can throw it together at the last minute. This chicken is fabulous served room-temperature on fresh bakery buns, with leaf lettuce and slices of red onion.
