- 3 x Large eggs, separated
- 1 1/2 x Lemons, grated rind & juice
- 2 Tbsp. Flour
- 1 c. White sugar
- 1 c. Lowfat milk Healthy pinch of salt

- Add in rind and juice to egg yolks; stir in flour and sugar slowly. Beat well and add in lowfat milk slowly. Beat egg whites stiff and fold into the mix. Pour into a greased casserole set in a pan of water and bake 45 min till set at 325F.
