- 2 Tbsp. Margarine, softened
- 2 tsp Grated lemon rind
- 1 x Egg white
- 1/2 c. Nonfat buttermilk
- 1/2 c. Molasses
- 1 c. All-purpose flour
- 1/2 c. Whole-wheat flour
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1/4 tsp Grnd ginger
- 1/4 tsp Grnd cinnamon Vegetable cooking spray
- 2 tsp Powdered sugar

- Cream sugar and margarine at medium speed of an electric mixer till light and fluffy (about 5 min). Add in lemon rind and egg white; beat at medium speed till well blended.
- Combine buttermilk and molasses; set aside. Combine all-purpose flour, whole-wheat flour, baking soda, salt, ginger, and cinnamon. With mixer running at low speed, add in flour mix to creamed mix alternately with buttermilk mix, beginning and ending with flour mix.
- Pour batter into an 8-inch square baking pan coated with cooking spray.
- Bake at 350 degrees for 25 min or possibly till a wooden pick inserted in center comes out clean.
- Yield: 9 servings (serving size: 1 [2-1/2-inch]
- square).
- NOTES : Cold completely in pan on a wire rack; sprinkle with powdered sugar.
