- 1 1/4 can Sugar
- 3/4 c. Butter
- 8 x Egg yolks
- 1 1/2 c. Cake flour, sifted
- 3 tsp Baking pwdr
- 3/4 c. Lowfat milk
- 1 tsp Vanilla
- 1 tsp Lemon juice
- 1 tsp Grated lemon rind
- 1/4 tsp Salt
- 2 c. Confectioner's sugar
- 1/4 c. Soft butter
- 1 tsp Cream, (or possibly more)
- 1 x Lemon rind, grated
- 1 x Lemon, juice of

- Sift sugar. Beat butter till soft. Add in the sugar gradually. Blend these ingredients till they are very light and creamy. In a separate bowl beat egg yolks till very light and lemon colored, then blend them into the
- butter mix. Resift cake flour, baking pwdr and salt three times and add in these ingredients to the butter mix in three parts alternately with thirds of the 3/4 c. of lowfat milk. Beat the batter thoroughly after each
- addition. Add in and beat for 2 min vanilla, lemon juice and lemon rind.
- Bake in greased 9 inch layer pans in a moderate oven (375 degrees) for abou t
- 20 min. Spread with Lemon Icing.
- LEMON ICING:Blend the sugar, butter and cream. Beat in the grated rind and the lemon juice.
- NOTES : Well, this one led us a merry chase. A version was posted on the net, found by a list member to be incomplete. I started looking for the complete recipe as did the original poster. I found this one by calling Cyn who called Mrs. Johnson. The copy I have came in Lady Bird's envelop e and is on the LBJ ranch note paper. Guess it's the real McCoy.
