- 1/2 lb elbow macaroni cooked
- 4 c. shredded Cheddar cheese - (16 ounce) divided
- 2 x Large eggs
- 1 1/2 c. lowfat milk
- 3/4 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 1/8 tsp paprika

- Preheat the oven to 350 degrees. Coat a 2-qt baking dish with nonstick cooking spray.
- Layer 1/3 of the macaroni in the baking dish. Sprinkle with 1 1/2 c. cheese. Repeat the layers; top with the remaining macaroni. Reserve the remaining 1 c. cheese.
- In a medium bowl, whisk together the Large eggs, lowfat milk, salt, and pepper till blended; pour over the macaroni.
- Cover and bake for 45 min, or possibly till heated through. Uncover and sprinkle with the remaining cheese and the paprika. Cover and let stand for 10 min before serving.
- This recipe yields 4 to 6 servings.
