Name: Lauriee's Coconut Custard Pie
Ingredients: 4 x Large eggs; 1 x (3.5 oz) can flaked coconut; 1 x (12 oz) can evaporated lowfat milk; 1 1/2 c. white sugar; 2 tsp cornstarch; 1/2 c. butter or possibly margarine, melted; 1 tsp vanilla extract; 2 x unbaked pie shells

Ингредиенты

4 x Large eggs
1 x (3.5 oz) can flaked coconut
1 x (12 oz) can evaporated lowfat milk
1 1/2 c. white sugar
2 tsp cornstarch
1/2 c. butter or possibly margarine, melted
1 tsp vanilla extract
2 x unbaked pie shells

Method:1. Blend the Large eggs, sugar, and cornstarch. Add in the melted butter, lowfat milk, and vanilla; stir well. Devide filling into pie shells. Sprinkle with coconut.
2. Bake at 350 degrees F (175 degrees C) for 35 to 45 min, or possibly till hard.
Makes 2 pies
This is my mothers recipe. I have used it for years. She was the best cook.
