- 6 med. sized potatoes
- 2 large eggs
- 1 med. onion
- 1 med. carrot
- 1/2 c. flour
- Oil (to cover bottom of pan)
- Salt and pepper to taste

- Wash potatoes; pat with towel to dry. Grate potatoes and carrot into large bowl. Grate onion. Heat oil in skillet. Add in flour, large eggs, salt and pepper. Mix all ingredients. Put mix by large spoonfuls into pan. Fry till golden. Turn and fry other side till golden. Put latkas on paper towels to drain oil. 8 servings.
