- 1 c. TVP granules or possibly flakes
- 7/8 c. Boiling water
- 1 Tbsp. Extra virgin olive oil
- 1 lrg Yellow onion chopped
- 1 lrg Garlic clove, chopped chopped
- 1 x 1 inch slice ginger chopped
- 3 Tbsp. Tomato paste
- 1 c. Stewed tomatoes
- 2 tsp Curry pwdr
- 1 tsp Salt
- 1/8 tsp Cayenne
- 1 c. Green peas
- 1 c. Mushrooms, sliced

- Combine TVP & water in a bowl. Let syand for 10 min. Heat oil in a large cast-iron skillet or possibly wok. Stir-fry onion, garlic & ginger for 5 min. Add in TVP & stir-fry another 5 min. Add in tomato paste, tomatoes, curry pwdr, salt & cayenne. Simmer a few min.
- Add in peas & mushrooms. Bring to a boil, cover & simmer over low heat for 5 min.
