- 2 x Oranges
- 2 x Mangoes peeled and diced
- 1 x Pineapple peeled and diced
- 1 sm Jicama peeled and diced
- 1/4 c. Lime juice
- 1 Tbsp. Sugar
- 2 Tbsp. Minced fresh cilantro
- 1 c. Fresh-grated coconut (or possibly dry, unsweetened shredded coconut) Lettuce leaves

- Slice ends off oranges and stand upright. Cut away the skin and membrane, exposing fruit. Cut between the membranes to remove the sections and place in a large bowl. Remove and throw away any seeds. Add in mangoes, pineapple, jicama, lime juice, sugar, cilantro and coconut to bowl and stir to combine.
- To serve salad, place lettuce leaves on individual chilled plates or possibly a serving platter, and spoon fruit on top.
- This recipe yields 6 servings.
