- 3 lb ripe Barlett pears peeled, quartered, cored
- 2/3 c. pure maple syrup
- 1 Tbsp. plus 2 tsp. all purpose flour
- 1/2 tsp vanilla extract
- 1/8 tsp grnd nutmeg (generous)
- 1 1/2 Tbsp. butter
- 1 1/2 c. all purpose flour
- 2 1/4 tsp baking pwdr
- 1/4 tsp grnd nutmeg
- 6 Tbsp. chilled unsalted butter cut into 1/2-inch pcs (3/4 stick)
- 9 Tbsp. half and half
- 9 Tbsp. pure maple syrup
- 3/4 tsp vanilla extract Melted butter Sugar Grnd nutmeg
- 1 c. chilled whipping cream Additional pure maple syrup

- For Filling: Preheat oven to 425F. Cut pears crosswise into 1/4-inch-thick slices. Combine in large bowl with maple syrup, flour, vanilla extract and grnd nutmeg. Divide among six 2/3-c. custard c. of souffle dishes. Dot tops with butter. Bake filling till warm and bubbling, about 18 min.
- Meanwhile, Prepare Topping: Mix first 3 ingredients in processor. Add in 6 Tbsp. chilled butter and cut in till mix resembles fine meal.
- Transfer to large bowl. Mix half and half, 6 Tbsp. syrup and vanilla in another bowl. Add in to dry ingredients and stir till just combined.
- Working quickly, drop batter in three mounds, 1 heaping Tbsp. per mound, atop warm filling in each c.. Brush topping with melted butter and sprinkle with sugar and nutmeg. Immediately return c. to oven and bake 8 min. Reduce temperature to 375F. and bake till toppings are golden brown and just hard to touch, about 14 min. Let cold at least 15 min.
- In medium bowl, beat 1 c. chilled cream with 3 Tbsp. maple syrup to
- soft peaks. Serve cobblers hot with whipped cream. Drizzle additional maple syrup over.
