Рецепт Hummus & Greek Salad
I decided to go healthy one night and went Arabic and Greek! Some of you may be familiar with hummus which is made from chick peas and the latter is pretty simple using feta cheese and lots of other fresh produce. Both are to be eaten with kubus (pita bread). The Greek salad was inspired by a book titled Vegetarian by Love Food.

- Hummus:
- 1 tin of chick peas (save the water)
- 1 small clove of garlic
- 1 tbsp lemon juice (or according to taste)
- 1/2 cup yogurt
- 1/2 tsp cumin
- Salt to taste
- Olive oil
- 2 olives (garnish)
- Greek Salad:
- 1 tomato - cut into wedges
- 1 onion - sliced
- 1 cucumber - chopped
- 10 - 12 green or any olives
- Feta Cheese - cubed (it can be salty so add according to taste)
- Few sprigs of coriander leaves - chopped
- Parsley (optional) - chopped
- Salad Dressing:
- 5 tbsp olive oil
- 1 tbsp white wine vinegar (optional)
- 1 tbsp lemon juice (or according to taste)
- 1/2 tsp sugar
- 1 tbsp chopped coriander leaves
- Salt and pepper to taste
Инструкции
- Hummus:
- Add all the ingredients (including the water from the chick peas) in a blender until a smooth paste. Transfer into a bowl and drizzle some olive oil and garnish with olives.
- Greek Salad:
- For the dressing, put all the ingredients in a large bowl and mix well.
- Add the remaining ingredients and toss together coating well with the dressing.
- Serve the hummus and salad with pita bread.
