- 1 x honeydew melon, halved, seeds removed
- 3 Tbsp. freshly squeezed lime juice
- 1/4 c. mint fresh leaves, stem removed
- 1/4 c. ice wine

- Scoop out melon flesh, preserving the rind to use as serving bowls.
- In a blender, puree melon, lime juice and mint.
- Strain puree through a fine strainer and throw away solids. Add in optional ice wine if you like. Refrigeratefor a minimum of one hour.
- Serve in hollowed out melon halves.
