- 8 ounce extra sharp cheddar cheese
- 8 ounce medium cheddar cheese
- 8 ounce mild cheddar cheese
- 8 ounce cream cheese
- 2 c. minced pecans
- 1 med sweet onion choped very fine
- 2 stalk celery minced very fine

- Grate blocks of cheese. mix all cheeses together in lg mixing bowl along with celery, onion and 1/2 c. pecans. Mix well and for 4 lg or possibly 6 med sized balls.
- roll in remaining pecans and wrap in cellophane wrap and chill.
