,%20Andy%20(The%20Wind%20Attack)%20and%20I%20were%20recording%20an%20episode%20of%20The%20Table%20Set%20podcast%20the%20very%20next%20evening.%20We%20had%20decided%20to%20devote%20an%20entire%20podcast%20to%20all%20things%20Ice%20Cream.%20The%20episode%20will%20have%20you%20partying%20like%20it's%201899%20and%20should%20hit%20the%20airwaves%20in%20the%20next%20few%20days.%20Which%20got%20the%20gears%20in%20my%20head%20a%20turnin'.%3C/p%3E%3Cp%3ENow%20if%20you%20listen%20to%20The%20Table%20Set%20at%20all%20(and%20I%20know%20you%20do!).%20Then%20you%20know%20we%20have%20a%20recurring%20theme.%20We%20call%20it%20Highbrow/Lowbrow.%20Though%20we%20really%20should%20call%20it%20Lowbrow/Highbrow%20because%20it%20usually%20involves%20taking%20something%20a%20bit%20crass,%20rough,%20or%20uncivilized%20and%20turning%20the%20volume%20up%20on%20it%20a%20little%20bit%E2%80%93%20making%20something%20easily%20dismissed%20as%20tacky%20or%20tasteless%20into%20something%20hip,%20cool%20or%20even%20downright%20elegant.%3C/p%3E%3Cp%3ESo%20I%20got%20it%20in%20my%20head%20to%20do%20a%20true%20Highbrow/Lowbrow%20number%20on%20my%20already%20chic%20zabaglione%20by%20making%20it%20more%20familiar.%20So%20I%20decided%20to%20transform%20this%20silky,%20frothy%20Italian%20dessert%20into%20a%20tasty%20version%20of%20good%20ole%20American-style%20apricot%20ice%20cream.%20Everyone%20loves%20ice%20cream.%20Meaning%20its%20a%20dessert%20for%20the%20masses.%3C/p%3E%3Cp%3EBut%20I%20failed.%20I'm%20not%20saying%20I%20failed%20turning%20zagablione%20into%20ice%20cream.%20Nope%20I%20hit%20a%20home%20run%20with%20that%20idea.%20My%20ice%20cream%20turned%20out%20silky%20smooth,%20with%20a%20very%20full%20mouth%20feel.%20It%20tasted%20super%20creamy%20with%20just%20the%20barest%20hint%20of%20fruit.%20In%20other%20words%20it%20was%20a%20very%20subtle,%20very%20sophisticated%20super-highbrow%20dish%20of%20frozen%20perfection.%20Maybe%20I%20should%20have%20added%20sprinkles??%20Whats%20more%20lowbrow%20than%20that?%20%20GREG%3C/p%3E%3Cp%3ESet%20a%20large%20saucepan%20over%20high%20heat.%20Add%201%201/2%20cups%20Prosecco,%201%20cup%20sugar,%20lemon%20zest,%20and%20salt.%20Bring%20to%20a%20boil,%20lower%20heat%20and%20cook%20until%20slightly%20thickened%20about%206%20minutes.%20Add%20apricots%20and%20poach%20at%20a%20bare%20simmer,%20turning%20occasionally,%20until%20fruit%20is%20tender%20but%20still%20holds%20its%20shape%20and%20skins%20are%20intact,%20about%204%20minutes.%20Remove%20from%20heat%20and%20allow%20it%20to%20come%20to%20room%20temperature,%20about%202%20hours.%3C/p%3E%3Cp%3EPut%20the%20egg%20yolks%20and%20remaining%201/3%20cup%20sugar%20into%20a%20stainless%20steel%20or%20heatproof%20glass%20bowl%20and%20whisk%20for%205%20minutes,%20until%20thick%20and%20pale%20yellow.%20Place%20the%20bowl%20over%20a%20pan%20of%20barely%20simmering%20water%20and%20continue%20to%20whisk,%20drizzling%20in%20a%20little%20of%20the%20remaining%20Prosecco%20and%20apricot%20nectar%20every%20now%20and%20then,%20until%20the%20mixture%20almost%20triples%20in%20volume%20and%20is%20light,%20foamy%20and%20barely%20holding%20in%20soft%20peaks,%20about%2015%20minutes.%20Take%20care%20not%20to%20get%20the%20mixture%20too%20hot%20or%20it%20will%20start%20to%20cook.%20Remove%20from%20heat%20and%20set%20aside%20to%20come%20to%20room%20temperture.%3C/p%3E%3Cp%3EIn%20the%20mea%20time%20take%20the%20cooled%20poached%20apricots%20out%20of%20its%20liquid%20(save%20the%20poaching%20liquid%20for%20another%20use)%20and%20put%20them%20into%20a%20medium%20bowl.%20Mash%20into%20a%20rough%20paste%20with%20a%20fork.%20Stir%20in%20the%20cream%20until%20well-%20incorporated.%20Whisk%20in%20the%20cooled%20egg%20mixture%20until%20frothy.%20Chill%20the%20mixture%20thoroughly,%20then%20freeze%20it%20in%20your%20ice%20cream%20maker%20according%20to%20the%20manufacturer's%20instructions.%3C/p%3E){kind=link}
