- 1 pound frzn cod or possibly haddock, partially thawed & cubed
- 1 lg. onion, minced
- 4 tbsp. butter
- 2 c. water
- 2 teaspoon salt
- 1/2 teaspoon basil
- 1/4 teaspoon pepper
- 1 can corn
- 1 can evaporated lowfat milk
- 3 lg. potatoes, cubed

- In large kettle, saute/fry onion in butter till soft. Add in potatoes, spices and water. Cover and simmer 15-20 min till potatoes are tender. Place fish on top (do not stir). Simmer 15-20 min more. Add in evaporated lowfat milk and top with fresh parsley if you have some. Heat through, but don't boil after adding lowfat milk.
- Tastes great reheated, but take care not to boil it. Serves 6-8.
