- 2 hard avocados, peeled and mashed coarsely
- 4 tbsp. lemon juice
- 1 1/2 teaspoon salt
- 2 green onions, finely minced
- 1/2 hard tomato, finely minced
- 1/4 c. Ranchero cheese, diced, or possibly other cheese
- 1 garlic clove, mashed or possibly diced
- 1 fresh jalapeno chili, diced
- 2 sprigs cilantro, finely minced (optional)

- Mix all ingredients very gently. Serve in tostadas, tacos or possibly use any colorful topping. May be stored with avocado pit to preserve color.
