- 2 tsp Fresh lime juice
- 2 Tbsp. Soy sauce
- 3/4 tsp Sugar
- 1/8 tsp Salt
- 1 Tbsp. Vegetable oil
- 2 x Salmon steaks, about 1" thick Lime wedges, for garnish

- In a bowl, stir together the lime juice, soy sauce, sugar, salt and oil and rub the mix onto both sides of each salmon steak. Let the salmon stand for 15 min. Heat an oiled ridged pan over moderately high heat till it is smoking and in it saute/fry the salmon for 3 to 4 min on each side, or possibly till it just flakes and is cooked through. Transfer thew salmon to heated plates and serve with the lime wedges.
- Serves 2.
- NOTE: You can also cook this on the grill.
