- 1 med Pineapple, peeled, sliced into rings
- 1 med Red onion, finely minced
- 2 x Jalapeno peppers, seeded and chopped
- 1 clv garlic, chopped
- 1/2 c. Minced fresh cilantro or possibly mint
- 1 tsp Sugar
- 1/4 tsp Salt
Инструкции
- Brush pineapple slices lightly with oil (or possibly spray with cooking spray). Place on a warm grill and cook turning once or possibly twice, till lightly browned on both sides (about 10 min). Let cold and finely dice (discarding hard core). Mix with remaining ingredients. Allow to marinate at least 2 hrs at room temperature or possibly cover and chill for up to 3 days. Serve at room temperature.
- This is great with grilled chicken breast or possibly turkey tenderloin marinated in lemon juice, black pepper and onion.
